Sunbutter No Bake Cookies GF/Vegan/Top9 Free
These no-bake cookies come together in minutes and are perfect for when you want a sweet treat without turning on the oven. Made with simple pantry staples, they’re free from gluten and the top 9 allergens, but packed with rich cocoa and creamy sunflower seed butter flavor.
Ingredients:
2 cups granulated sugar
½ cup Spectrum organic shortening
2 tablespoons cocoa powder
1 teaspoon vanilla powder
1 teaspoon salt
½ cup Rice Dream rice milk (or any unsweetened alternative milk)
½ cup sunflower seed butter (I love Sunbutter brand! - you can buy it in bulk here)
2 cups Gluten Free Prairie oatmeal
Instructions:
Line a baking tray with parchment paper and set aside.
In a medium saucepan, combine the sugar, shortening, cocoa powder, vanilla powder, salt, and rice milk.
Place the pan over medium-high heat and whisk constantly until the mixture comes to a boil.
Once boiling, immediately remove from heat and whisk in the sunflower seed butter until fully incorporated.
Stir in the rolled oats with a soft spatula until evenly mixed.
Using a melon ball-sized scoop, drop the cookie mixture onto the prepared tray.
Let cookies set at room temperature for about 10 minutes or until firm.
Yields:
15–30 cookies, depending on scoop size.
Storage:
Store in an airtight container at room temperature for up to 3 days.
Tips:
A smaller scoop will help the cookies set faster. Larger cookies are great too—they just need more time to firm up.
