Pumpkin Spice Doughnuts (GF/Vegan/Top 9 Free)
There’s just something about fall that makes me want to bake doughnuts. The warm spices, the smell of pumpkin in the oven, and the joy of dipping a fresh batch into cinnamon sugar—it’s the season wrapped up in a bite. These pumpkin spice doughnuts are soft, fluffy, and full of cozy flavor. I prefer to eat them still warm from the oven, but feel free to make them ahead of time and freeze for up to a month.
One of my favorite parts? You can prep the spice mix and sugar blend ahead of time, making this recipe come together in minutes whenever the craving strikes.
Prepare Ahead
Pumpkin Spice Mix
½ cup ground cinnamon
¼ cup ground ginger
2 Tbsp ground cloves
Add all ingredients to an airtight container and shake well to combine. Store at room temperature for up to 6 months.
Pumpkin Spice Sugar
1 cup granulated sugar
1 Tbsp pumpkin spice mix
Whisk together in a small bowl until evenly blended. Store in an airtight container for up to 6 months. Perfect for dusting doughnuts, cookies, or even your morning toast.
Ingredients
Dry
2 ¼ cups pastry blend
1 ⅓ cups sugar
1 tsp xanthan gum
1 tsp baking soda
1 tsp salt
1 ¼ tsp pumpkin spice mix (see recipe above)
2 tsp milled flaxseed
Wet
⅔ cup pumpkin puree
1 ⅓ cups water
¾ cup canola oil
For coating
Pumpkin spice sugar (see recipe above)
Directions
Preheat oven to 350°F. Grease your doughnut pans (get the ones I use here).
In the bowl of a stand mixer fitted with the paddle attachment, combine all dry ingredients. Mix on low speed for 1 minute.
In a separate bowl, whisk together the wet ingredients (pumpkin puree, water, and oil). Slowly pour the wet mixture into the dry ingredients while the mixer runs on low speed.
Once combined, increase speed to medium and beat for about 2 minutes. Scrape down the sides as needed.
Use my favorite yellow scoop for a perfect portion (get it here) to portion batter evenly into the prepared doughnut pans. Gently tap the pans on the counter a few times to settle the batter.
Bake for 12 minutes, turning pans halfway through for even baking.
Allow doughnuts to cool in the pan for a few minutes, then carefully remove.
While still slightly warm, dip each doughnut into the pumpkin spice sugar mixture.
Serve immediately and enjoy the cozy fall flavors!
